Pan Fried Sea Bass with a brown butter and caper sauce.
This Recipe is so simple, quick and utterly delicious.
Serves 4
2tbsp butter
4 fillets of Sea Bass
a handful of capers
1 lemon
a slash of water.
Heat the butter in a frying pan until it begins to foam. Place the sea bass in the pan skin side down. Use a fish slice to press it down so it doesnt curl. Cook for a bout 3 minutes. Turn over and cook for another 2.
take the fillets out the pan, add a handful of capers to the butter, a few squeezes of lemon juice and a splash of water to help emulsify.
Pour over the sea bass fillets with some chopped dill or parsley. The butter should be brown with a wonderful nutty flavour

This recipe is so quick and easy and utterly delicious. You can add any flavourings you like.
Serves 6-8
170g Plain Flour
170g Wholemeal Self Raising flour
1/2 tsp Sea salt
1/2 tsp Bicarbonate of soda
190ml Buttermilk or a mixture of yoghurt and milk
2tsp Chilli flakes
4 spring onions sliced.
Preheat oven to 200C
Measure all the ingredients into a bowl and using a spoon mix until a dough is formed.
Shape into a ball and place onto a non stick baking sheet. Slash the top with a knife and bake for 30-40 minutes.
Leave to cool and enjoy.
